Teriyaki Salmon

A very light and simple dish that really makes the most of a few quintessential Japanese flavours to produce a mouthwatering meal in minutes.

What

4 salmon fillets

For the marinade:
160ml soy sauce
160ml mirin
30ml sake
2 tbsp granular Canderel

How

Place the salmon in the teriyaki marinade for at least 10 minutes. Turn occasionally. Drain salmon, reserve the marinade.

Cook the salmon in a heated oiled pan, brushing occasionally with the marinade until cooked as desired.

Bring the reserved marinade to boil in a small pan, reduce heat and simmer until the sauce reduces to a third, then remove from heat and add the Canderel.

Serve the salmon with pak choy, noodles and a drizzle of teriyaki sauce. Alternatively substitute the salmon for chicken breast or strips of sirloin beef.
