Chocolate Mousse Cups

Chocolate mousse

Rich and decadent, there's nothing like chocolate mousse to give you a much needed chocolate hit. If you make these at the weekend to enjoy with family or friends - and you can still have two luscious, deliciously sweet mousses left to linger over in the week. Heaven!

What

160ml skimmed milk
60g skimmed milk powder
60g cocoa powder
13g of granular Canderel
4 tsp (12g) concentrated chocolate essence
1/2 tsp (2g) vanilla essence
11g gelatine
90ml water
2 egg whites
Pinch of cream of tartar

How

Whisk the skimmed milk powder into the cold milk, then warm it up to just before boiling. Whisk in the cocoa powder and allow to cool slightly.

Mix in the Canderel, vanilla and chocolate essence.

Make up the gelatine according to pack instructions, then add to the chocolate mixture.

Leave in a cool place until the mixture thickens but don't let it set.

Put your egg whites together with a pinch of cream of tartar in a large bowl and whisk until they get to the hard peak stage.

Fold into the mixture a spoonful at a time.

Spoon into 6 individual glasses or pour in to a large serving bowl and leave to set in the fridge.

Important :
This recipe contains uncooked egg whites so is not suitable for pregnant women, the elderly, very young children or the infirm. You can substitute dried egg white powder instead.
