Caramelised Onion and Feta Crostini
A tempting and low calorie nibble

What
1 thin baguette
1 tablespoon olive oil
2 red onions, thinly sliced*
1 tablespoon olive oil
2 tablespoons granular Canderel
1 tablespoon red wine vinegar
Salt & Pepper
100g feta cheese
How
Cut the baguette into approximately 20-22 thin (5mm) slices. Place into a bowl and toss with the olive oil then spread in a single layer onto a baking sheet. Bake in a pre-heated oven for 10 minutes until crisp and lightly coloured. Allow to cool.
Meanwhile heat the oil in a frying pan and gently soften the onions for about 5-6 minutes. Add Canderel and vinegar and allow to soften and caramelise for another 5 minutes. Season and allow to cool.
This part of the recipe can be done in advance – the crostini can be kept in an airtight container and the onions in the fridge overnight if preferred.
When ready to assemble place a teaspoonful of the caramelised onions onto each crostini and then crumble the feta cheese over the onions. Sprinkle with coarsely ground black pepper and serve.
*Plain onions work just as well in this recipe if you don’t have red onions to hand
