1 egg
150ml sunflower oil
175ml full fat milk
125g plain flour
3 tsp baking powder
75g porridge oats
3½ tbsp of granular Canderel
¾ tsp salt
½ tsp mixed spice
½ tsp ground cinnamon
150g raisins
100g apple peeled, cored &diced
How
Preheat oven to 180 c/gas 4.
Beat the eggs in a bowl and mix together with the oil and milk.
In a large mixing bowl, combine the remaining ingredients, pour over the egg mixture and mix until just moistened. Don’t over mix!
Spoon into prepared muffin tins and bake for approximately 25 minutes or until golden and cooked through. Allow muffins to cool in tin before transferring to a wire rack.
